I’ve Been Drinking….Watermelon

If someone asks you, “what’s your favorite summertime fruit?” What would you say? Some might say pineapples, while others will say mangoes. This summer, many celebrities seem to have a favorite choice. Watermelon. Watermelon helps with sore muscles, helps heart health, while being rich in vitamins and minerals. To top it all off, it’s been called a natural Viagra. Oh my! I mean, even Beyoncé has switched teams. See-Ya lemonade. Hello watermelon!

Beyoncé is not only stunning and a talented singer, performer but she’s also humble, generous, a fantastic mother and wife. The list can go on. I mean, we are talking about Queen B here! Now, we can add a food genius onto the list. She recently just invested in WTRMLN WTR. Why? Because she feels like it’s the future of clean, natural hydration. Tia Mowry whipped up a dish on Home & Family that is perfect for the summertime and so simple anyone can do it. Mowry shows her viewers how to bring watermelon and the grill into one happy place. Here is Tia’s grilled watermelon salad

1) Place a strainer over a bowl, making sure there is enough space in the bottom of the bowl to contain dripping liquid. Line the strainer with a double layer
of cheesecloth and pour the yogurt into the cheesecloth. Let the yogurt drain in the refrigerator for at least 1 to 2 hours until thickened.
2) In a bowl, mix the strained yogurt with the lime zest, lime juice and agave. Set aside. In another bowl, mix together the paprika, sugar, chili powder and 1/4 teaspoon salt. Sprinkle the watermelon rounds on both sides with the spice rub.
3) Heat a griddle pan over high heat and spray with coconut spray. Add the watermelon rounds and grill until the watermelon has softened and acquired grill marks, about 2 minutes per side.
4) Remove the watermelon to a plate and drizzle with 1/2 cup of the lime yogurt. Sprinkle with the pistachios and mint. Slice into wedges and serve immediately.
