With a successful Memorial Day weekend holiday in the books, the unofficial kick off to summer has arrived which means it’s the perfect time of the year to eat lots of fruit and sip on lots of smoothies!
Elena Hight, Team Toyota Athlete and an American Olympic snowboarder who recently spent the weekend at #HotelTacoma, is sharing her favorite smoothie recipe to enjoy weather you are soaking up the sun at the beach or for an active hiking outdoors.
· 1 cup chopped pineapple
· 1⁄2 banana
· 1⁄2 cup coconut water
· Juice of 1 lime
· 3-4 sprigs mint
· 3-4 sprigs basil
· 2 tsp. agave
Preparation: One night before, chop pineapple and banana and freeze. Add all the ingredients to blender and blend until smooth.
Note: If you don’t freeze the fruit in advance, just add ice cubes to fresh fruit in the blender for similar consistency.
